Peach Souffle

Ingredients (for 8 people)
2 cups of peaches, liquidized and strained
6 egg whites
1 tea spoon vanilla extract
6 egg yolks
3/4 cup sugar
3 cups flour

Preparation
Heat the liquidized peaches with the vanilla extract.
Beat the sugar and egg yolks, add flour and mix well.
Add the peaches while stirring on low medium flame.
Don't let it boil and stop when thickened.

Beat the egg white and fold carefully into the mixture.

Butter the souffle dishes and coat with sugar.
Fill each up to 1 centimeter lower from the top.
Dip a small chocolate perline unto each.

Put in oven preheated in 200°C (not turbo).
Bake for 15 minutes in the middle of the oven.

Serve immediately.
