Stuffed Eggplants

Ingredients (for 6 people)
6 small eggplants
200 grams of ground beef
6 tablespoon of olive oil
2 onions
3 cloves of garlic
A pinch of pepper
A pinch of salt
A pinch of Thyme
A pinch of Paprika
1 canned mashed tomatoes

Preparation
Split the eggplants and remove most of the inside with a spoon.
Cut the inside of the eggplant to small pieces.
Cut 1 onion to small pieces.
Saute with olive oil, onion and the inside of the eggplant for several minutes.
Add meat, salt, pepper and thyme and cook for 5 minutes.
Stuff the Eggplants.
Cut 1 onion to small pieces.
Saute in a pot with olive oil for few minutes.
Add salt, pepper, paprika, thyme and mashed tomatoes. Add one glass of water.
Cook for 5 minutes.
Put the stuffed eggplants in the sauce and cook for 1 hour on low flame.
Serve hot or cold!
