Salmon Tartar with Wassabi Sauce
Ingredients
300 gr. fresh salmon fillet, bones and tendons removed Wassabi sauce Soy sauce 4 quail eggs 2 tbls. red salmon caviar 2 chive stems, chopped Preparation Cut salmon fillet into small cubes, Mix with chives and place in a ring mold on large serving plate. Cut eggs in half and place around salmon. Spread caviar over salmon and gently remove the ring mold In a separat bowl, mix Wassabi sauce and soy sauce until mixture obtains desired pungency and thickness.
