Mediterranean chowder

Ingredients
2 kg. head of Grouper fish
1 carrot, cubed
1 zucchini, cubed
1 medium potato, cubed
1 stalk celery, sliced
Coriander, chopped
2 bay leaves
4 English peppercorns
1 leek, white part, quartered
1 onion, chopped
10 cloves garlic
Pinch salt
Sweet paprika
Black pepper
20 gr. perno
1/2 cup olive oil
1/4 tsp. cumin
1 dried red hot pepper
Peel from 1 orange /lemon
1 cup dry white wine

Preparation
In large pot (5 liter), saut'e onion in olive oil. Add carrot, zucchini, potato, celery and leek, and mix.
Add garlic while mixing and then add got pepper. Add fish head and water and bring to a boil. Remove scum and add English pepper, salt, black pepper, paprika and cumin and simmer for about 1 hour.
Remove scum again, and add white wine and citrus peel. Bring to a boil.
Discard citrus peel and remove fish head. Separate fish meat from bones.
Preserve liquid and gelatin from head, return fish meat and gelatin to soup, and bring to a boil again. Remove remaining scum. Add perno, Parsley and coriander and serve.
